My experience with Snake River Farms has been nothing short of extraordinary.
My orders arrive flash-frozen and I place them in my freezer until ready to cook.
I am extremely partial to the Filet Mignon cut.
I have refined my cooking methods over the years from just thawing and cooking on the grill to an entire multi-step process as follows:
- 24 hours before the meal, slightly thaw the Filet on the counter (Note: It should stay mostly frozen)
- Take Filet out of SRF packaging and apply salt and pepper spices to all sides.
- Place Filet in a Sous-vide cooking-safe bag, vacuum, and seal the bag.
- Place Filet in the refrigerator overnight and let the spices do their thing!
- Four hours before your intended meal time, take the Filet out of the refrigerator and place it in a Sous-vide bath at 131 degrees (Medium Rare) for three hours.
- After three hours, take Filet out of the Sous-vide (It will look awful and grey but don’t despair) and let rest on the counter or place it back into the refrigerator for 30 minutes. This cools the outside of the Filet and prepares it to be seared.
- While the Filet is resting, get your wood-fired grill warmed up and ready to finish the Filet over direct flames. Using direct flames under the Filet is important to induce the Maillard Effect on the outside of the steak to get a good crust.
- When the grill is ready, take the Filet out of the Sous-vide packaging, pat dry on all sides, and place the Filet over the open flame for roughly 3 minutes per side. You just want to see the outside of the steak get that wonderful seared, crusted finish.
- When the Filet is finished, place it on a serving plate and garnish with a pat of grass-fed butter. Let the Filet rest for 10 minutes and prepare to enjoy the best steak of your life!
